Anyone no how to tell a dummy how to select all contours at once on a big project in fusion 360?

Did you try to Extrude your sketch before moving from Design to the Manufacture tab? If you can successfully Extrude then you can select the entire Face and all contours.
Post the f3d or dxf of your sketch and we can look it over for open contours.
Sometimes you can just select the “sketch” from the file tree on the left:
This is a simple demonstration of how to pick the “sketch profile” for your “Contour selection”. Fusion will pick everything and then make a cut path if the sketch is clean. Really complicated designs might give Fusion some problems.
