Can you disable updates on this one?

I believe you can. I watched a YouTube video on how to do it. Microsoft doesn’t give you the easy option. You can pause it for a predetermined amount of time. Windows 11 Pro
Although I don’t use it for Fusion, I will run it without any problems. You might get a graphics warning but, it will work.

Do you have to register with Microsoft Store? Is the OS subscription?

Those are the two things that burn my butt.

I believe that if you set it up initially without the internet connected it will work. You just have to tell it you don’t have internet during setup.
